Our pizza’s dough has been partially (“par”) baked here at Mickey’s before it’s packaged. By following the directions on the box our dough bakes to a delicious golden brown crispy crust. Par-baking also seals in and enhances the natural flavors of the dough for optimum baking at home.
Typical frozen pizza makers flatten their dough with rollers. This presses out the air that developed during the dough’s proofing process and produces a dense flat texture, once it is baked. Here at Mickey’s, we hand-stretch each and every pizza. This hand stretching process produces a crust that is airy and full of holes. The baker's fingers create air pockets in the dough, allowing the dough to rise during baking. The bread-like crust, that Mickey’s is famous for, is a direct result of the hand-stretching process.
